Our choir director at the Angelicum always manages to find music that is within our reach, but challenging enough to be interesting–and at the same time beautiful.

I've found some of Christopher Dalitz's music on CPDL before. It's generally very accessible and very nice. He has an arrangement of Panis Angelicus for ST and Classical guitar that is particularly nice for Spanish choirs. The same goes for his arrangement of O Salutaris.
